Books become outdated so fast. Your best bet is to visit http://www.cruisecritic.com - They have a message board for each port and you will be able to read reviews of dozens of different excursions.

Here are my recommendations:

Belize - You should definitley go cave-tubing. You can’t do it anywhere else, and it is absolutely spectacular! We booked with Reggie http://www.regtour.com and we were so pleased! We had a smaller group and a longer ride than any of the other cruise ship excursions.

Costa Maya - We went to see the mayan ruins - and then to have an authentic mayan dinner with a mayan family. We booked with http://www.chacchobenruins.com/ and were very pleased.

Check out the cruise critic website and you can decide which excursion will be the best for your family. Hope this helps!

The problem with most books is they either focus on the Caribbean or Belize or Mexican Riviera, but not all three.
http://www.amazon.com/gp/product/0762738863/sr=1-3/qid=1154676775/ref=sr_1_3/104-3439878-7482362?ie=UTF8&s=books is a link to a book by Kay Showker that has all three listed, there’s some stuff about selecting the cruise line etc, but there’s port info as well.

http://www.towd.com/ is a link to all the tourist office’s website links, that’s handy.

is a link to people’s input on the different W.Carib ports, the links to each port are to the upper right. Pretty well done, almost makes a guidebook not necessary.

Have a nice trip, and don’t use your credit card to buy anything in Mexico, don’t even use it as collateral on renting something like snorkeling gear etc.
